Is anyone like me and completely hate deciding what to have for supper? I recently saw a post on Facebook stating "Who would have known the hardest decision of your grown up life would be what to make for dinner!" OMG this is soo true! One doesn't like something that the other does. I'm constantly making either the same thing over and over again, or make two meals. Plus, I was getting so sick of the same old boring meals. After a night of arguing as to "what is for supper" the night before, I spent the next morning going through Pinterest looking for quick and easy supper ideas. After a couple hours of pinning away, I had a few good ideas to go off of. I headed out to the grocery store to pick up my ingredients that I needed for a few of the meals I had decided to try out. Today's supper idea is called Easy Cheesy Baked Tortellini! I will link the recipe I went off of here!
I thought it was too rich for me, my husband loved it, and my son didn't' like it at all.
Here is the recipe:
I started with taking out my pasta for an hour before. I know it said you could use frozen, but I let it defrost for a bit. I also used what I had which was Bacon and Cheese flavour. You could use whatever you have. I also used pre shredded cheese.
First I browned my ground beef and added a little garlic, salt, pepper and Italian seasoning.Next I strained the grease off, when it was browned.
At the same time, I boiled my pasta. Because I had thawed it a bit, it didn't take long.
Once the ground beef was browned and drained, I added my can of pasta sauce and the package of creme cheese. Now this is where I would change up the recipe if I ever made it again. I found it too much to use a full bar of cream cheese, I would only use half next time. So if you are a person who loves cream cheese, then you might enjoy it this thick and cheesy, I, on the other hand felt it was too heavy with the full cream cheese. Mix it all together unit all the cheese is melted and mixed together.
Next I drained and rinsed the pasta with luke warm water. I did this so that the pasta wouldn't stick together.
Next I added the pasta to the meat sauce. I mixed it well.
Until it looked like this.
Next I poured the mixture into a greased 9×13 baking dish and then top with shredded mozzarella and shredded parmesan cheese.
I placed the casserole on the center rack and baked it at 350 degrees for about 20 minutes. I then baked it for an additional 3 minutes with the broiler on to completely brown and melt the cheese on top.

So are any of you like me in the morning??? Slow, tired, and just can't seem to get their stuff together?? I'm being honest when I say "I'm not a morning person", like I HATE mornings!!
I love to spend my time drinking coffee, checking emails, and social media that I never have time for having a bite to eat for breakfast!
Recently, however, I have been pre making our breakfasts, so we can take them along with us for our day, and that saves us from a) starving until lunch, or b) spending unnecessarily at the local drive thru for something to eat! Here is what I have come up with that both myself and my family will eat for a quick breakfast on the go!!
These awesome breakfast sandwiches can be made a few days ahead and either stores in the fridge for everyone to grab one, or stored in the freezer to grab for a week or two!!
Here is what I used and what my production looked like!!
I started with spraying my muffin tins first! Then I added egg, salt and pepper and chopped onions! I mixed them up with a fork and put them in the oven to bake! 350 degrees for 20-35 minutes, depending on your stove!
Next I cooked some bacon! Cause we all Love the Bacon!! I set that aside to cool down!
I then toasted the English Muffins! Not too toasty tho, as I didn't want them to break apart easily! So I guess you could say I "toasted lightly to Medium"
Then it was time to assemble!
I decided to add cheese and also to "mix it up" and use Turkey Deli Meat as well! This will give us some variety throughout the week, so we will have our choice in flavours!!
As you see above this is how I assembled them! Don't they look scrumptious!!
After wrapping them and putting them either into the fridge or freezer, we were all ready for the dreaded Mornings of the next week!
